This month of fasting and spiritual commitments to the will of the almighty special consideration are given to the foods and meals we use in breaking our fast.

Desserts are important because they supply our body with nourishment better and faster than the main meal. Suffice to say it should be eaten in small portion after the main meal because it is usually very rich in calories. For people with diabetes not all desserts can be taken most especially desserts rich in sugar should be taken with caution to avoid the risk of increase in the fasting blood sugar levels. 

Today’s choice of dessert combination are 

Vanilla ice cream and German Apple pie. 

Vanilla ice cream is not so hard to make when the ingredients and method right. It’s something you can prepare using the custard mix method with an ice cream maker or the conventional mixing method and deep freezing for 6 to 8 hours to set the ice cream mix. Whichever way you choose depends on the the kitchen appliances available in use. I will be making both methods. 

The German Apple pie dessert recipe I I choose because of the fresh apples it contains, an apple a day keeps the doctor away is one funny saying my husband always says. His love for Apple pie is also part of the reason I want to make it because it’s one of my husband favourite desserts.

INGREDIENTS FOR GERMAN APPLE                             PIE 

         Pie filling ingredients 

  • Raisins                                60 g
  • Corn Flour                         2 tsp
  • Sugar                                   2 tbs 
  • Cinnamon                          1 tsp 
  • Nutmeg                               1 tsp 
  • Granny smith apples (sliced )  6pcs 
  • Salt                                      1/4 tsp 
  • Lemon  (juiced)                1 tbs 

         Pie crust ingredients 

  • Salt                                       1/4 tsp  
  • Egg yolk                               1 pc 
  • Butter                                   1/2 tsp 

  • Baking soda                         1/4 tsp 

  • Baking powder                   1/4 tsp 

  • Water                                    4 tbs

  • Mix the pie crust ingredients until you get a smooth dough if the dough is too hard add a little water knead through with hands and sprinkle some flour on the dough to remove the stickiness set aside divide into two.
  • In a small cooking pot pour in the sliced apples and all other pie filling ingredients mix together with 1/4 cup water you can choose to do away with the lemon juice because it’s only serves to increase tartness of the Apple flavour. Cook for 15 minutes mixing on intervals then set aside to cool down.
  • Roll out your dough spread wide enough to cover the inside of the pie dish. 
    Place the dough in the dish and fill in layers of first sliced Apples then the raisins followed by some sauce from the mix continue like this until filled up then take a thin slice of butter then cover with another spread of pie crust coat with the egg yolk using a soft brush. 

  • Transfer into a preheated oven at 200 degrees Celsius then reduce the heat to 170 degrees Celsius bake for 30 minutes or until pie crust is golden brown. 

  • Transfer to cooling table and remove from pie dish.

       INGREDIENTS FOR VANILLA                               ICECREAM 

Condensed milk           2 tins 

 Egg yolks                        8 pcs 

Sugar                                100 g

Whipping cream       1 cup (divided) 

Vanilla Sugar               2 tsp 

Salt                                  1/8 tsp

  • In a saucepan on the cooker at medium heat pour the condensed milk in and stir until very hot but not boiling. Remove from heat and set aside.
  • Pour egg yolks and sugar together in a mixer and mix at medium low speed using the whisker attachment of the mixer or you can also use your blender too .mix for 30 seconds or until you get a smooth mix 
  • Continue mixing and also add slowly the warm condensed milk until everything is well incorporated. 
  • Return the mix to the saucepanon the cooker at medium heat start to stir continuously until bubbles form  at hedges of the saucepan  and the mix is steamy do not let boil please
     . Remove from heat pour into a big bowl.
  • Add whipping cream and vanilla sugar or extract into the mix . Mix well until you have a smooth mixture. This is called the custard mix method. 
  • Now you can portion into your popsicles form 

    and icecream maker if available. 

     If you don’t have any of these just pour in an airtight container and deep freeze for about an hour to get a soft set .
