Nigerian Konkosion Rice recipe . A Ramadan delight

”Konkosion


– Fresh tomatoes: 2 large sizes “


–  Basmati rice: 250 g”


– Fresh paprika: 1 large pcs”


– Scotch bonnet pepper: 1″

– Onions  : 1 big bulb”

– Red Palm oil: 2 cooking spoonful”

– Aadun seasoning powder:1″

– Salt :1 tsp”

– Locust beans ( optional ):1 tsp” 

– Pumpkin leaves(optional ): handful “

– Roasted Mackerel: 1 pc “

– Dry Crayfish ( optional ) :50 g ” 

– Ginger: 1 inch ” 

– Garlic: 1 clove “


[Recipe Preparation and Cooking Instructions ]


1. Slice the tomatoes, paprika, onions, ginger and garlic and pour in  to a bowl and set aside. Then slice the vegetable if you are using some.


2.wash the rice in fine mesh strainer and rinse under cold running water until water runs clear about 2 minutes.”


3.Shred the roasted fish into pieces and clean the dry crayfish and aside both.” 

4. In a cooking pot on the cooker under medium heat temperature pour in the red palm oil  add half of the onions, garlic and ginger add the locust beans if using some .let sizzle until until tender. ”

5. Pour in the rice and stir for 1 to 2 minutes then add water up to the just above the rice then lower the temperature of the cooker to medium low. ”

6.Throw in the remaining ingredients stir and if the water in the mix is getting dried and the rice is still  hard, add some water a bit the rice mix 

 cover and allow to cook for 10 to 15 minutes  then it’s ready”

7. Serve as desired with plantain as a side dish ( optional )
