Miyan Kuka and Tuwo Shinkafa,my grandmother Hausa soup recipe

This is a particular soup mama is so fond of cooking,the powder Miyan kuka is easy to cook and readily available in the market.

Miyan Kuka is a soup originally from the northern part of Nigeria West Africa, and it’s something that could come in handy if you are short of a recipe to cook with your stew as a side soup.

Miyan kuka is known as luuru soup by Yoruba people of the South West Nigeria according to local source the luuru powder is made from dry Baobab leaves and dried okra and it is usually cooked and served with Tuwo Shinkafa a dry corn powder meal. My Grandmother feed us this soup while growing up and I always remember licking my hands everytime we eat this delicious soup.

INGREDIENTS

  • Kuka Powder 2 tbs
  • Stock broth 1 cup
  • Dry roasted fish 1 medium size
  • Assorted meats parts 250 g
  • Onions 1 medium size (diced)
  • Aadun seasoning powder 1 tsp
  • Locust beans 1 tbs
  • Dry Chili powder 1 tsp
  • Crayfish 2 tbs
  • Palm oil 1 cooking spoon
  • Salt 1 tsp
  • Corn powder 1 cup
  • Baking soda 1/4 tsp

Recipe preparations and cooking instructions

Pour the washed goatmeats for making some stock broth in a cooking pot on the cooker on medium heat temperature . Season with salt,aadun seasoning powder,garlic,ginger and onions with 1/2 water start cooking till tender and you have enough stock.

  • Pour half the stock in another container ,remove the bones from the fish and add to the cooking stock mix add the chili pepper and locust beans with the crayfish
  • In the second container with the half of the stock add the miyan kuka powder in the other half of the stock broth and stir until all lumps disappearpour inside the cooking goatmeats stock stir until smooth .
  • Add the Palm oil and taste for salt and flavour if satisfied good if not add more salt as desired cook for 10 minutes more and your miyan kuka is ready to serve

For Tuwo Shinkafa

  • In a small pot bring water to boil under high heat add a little salt (optional )and some baking soda and 1 tablespoon of. Then make a paste with the corn powder in a bowl
  • Pour in the boiling water and start stirring until you get a semi solid mix
  • Add some water to the sides of the mix and reduce the heat to low and cover let simmer until the mix thickens more then stir together vigorously until you have a solid but not hard mix.
  • Serves together with the miyan kuka
  • Enjoy!!!
